Brem (Traditional Meal/Drinks)

stay in jogja -- Brem is a special food from East Java and Bali. Brem has existed since 110 years ago. There are three kinds of brem:
  1. Madiun brem --> It tastes mix between sweet and sour. And has white-yellowish colors.
  2. Wonogiri brem --> This brem has white color with sweet flavor and it is easy to dissolve in water.
  3. Bali brem --> It is in the form of liquid/ a kind of drink. It will be better if you consume it after having a meal.
All of those brem are made of fermented-sticky rice-water which also has gone through fermentation process.


Brem in solid form usually sold in market are Madiun brem and Wonogiri brem. These brem are very popular because of its delicious taste and its practicability. Brem’s sensation will appear when it comes in your mouth, then it melts and disappeared and leaving a unique taste in your tongue like a little mint flavor.

The result of experiment done by Winarno et al (1982) shows that the most chemical substance contained in solid brem are sugar, extract starch, and lactate acid. Solid brem is a good sugar supplier. In every 100 gram of brem contains 65.18 gram of sugar, so that it gives sweet taste and also as good power-supply for the body. The chemical composition of brem could be seen in the table.
